I’m a huge fan of red velvet. Ever since that one fateful day (a few years ago in June) that my friend took me to a restaurant and introduced to me to this delightful flavor, I’ve been hooked. Any time there’s red velvet (cake, cupcake, cookie, whoopie pie, etc), I just HAVE to try it! I’ve even tried making cakes myself with the boxed cake mix from the market (by the way, they taste nothing like red velvet, and as a red velvet lover, I do not recommend).
I’m going to share with everyone a recipe inspired by How Sweet Eats for a chewy red velvet cookie. This delightful treat is sure to be a hit for Valentine’s Day! The recipe is a little hefty, but once you’ve gather all the ingredients, it’s almost as easy as any other cookie (but not as tasty)!
Ingredients for ~a dozen cookies:
- 1/2 cup butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup cocoa powder
- 1 teaspoon red food coloring
- cream cheese + sugar (optional)
Preheat the oven to 375 degrees.
With an electric mixer, mix the butter and sugar until it creates a fluffy texture. Add egg, vanilla, and food coloring then mix into the mixture. Add in the cocoa powder, flour, baking soda and the salt and fold until all ingredients are mixed thorougly. With a heart shaped cookie cutter, cut out designs from rolled out pieces of dough. If the dough is too wet, add a little more flour.
Scoop out the mixture onto a cooking sheet. Bake for ~10-12 minutes.
If you would like to add a little extra oomph to these cookies, try adding a cream cheese topping to the cookie as icing!
